Banana Peanut Butter Blondies


No I'm not dead I realize that may be hard to believe haha even though I am close too it! I have hardly baked anything since I have gotten pregnant. These babies and just growing so rapidly and I'm always in too much pain and it's too hot... I thought I would be baking up a storm too. I made my mom 3 dozen cupcakes for Mother's Day I have photos of this but they aren't that great so you may see them you may not. Either way your seeing these because they are delicious.

Step 1: Cream together butter and brown sugar.

Step 2: Add in 2 eggs. One at a time. Then add in Vanilla.

Step 3: Mix together dry ingredients.


Step 4: Slowly add in dry mixture. DO NOT OVER MIX.


Looks nice and good to me...


But we need to add in some yummy things at this point the batter tastes like cookie dough.


Oh yeah toffee and peanut butter? :)



Huge bag of frozen bananas hehe I only used 1 1/2 banana.

Add to bowl.


Grease an 8x8 pan and fill


Bake for 30-35 sometimes even 40 minutes.


Dust with a little powder sugar let cool and enjoy <3>


I couldn't really find a recipe base exactly which what I wanted so I used more or less this recipe which can also be found on Crepes Of Wrath.

White Chocolate Macadamia Nut Blondies
from Erin's Food Files

1/2 pound (1 cup) unsalted butter, at room temperature
1 1/2 cups light brown sugar
2 eggs
1 tablespoon vanilla extract
1/2 teaspoon almond extract (optional)
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
2 cups white chocolate chips
1 cup macadamia nuts, toasted and roughly chopped
Turbinado sugar (for garnish/sprinkling - optional)
*I used 10oz package of Reeces Peanut Butter Chips and 1/2 cup of Heath bits instead of white chocolate. Substituted 1 1/2 bananas for the nuts.*

1. Preheat the oven to 350 degrees F. Chop your macadamia nuts and place them on a baking sheet. Toast in a 350 degree F oven for 5-10 minutes, until golden and fragrant. Allow to cool before using.
2. Cream the butter and brown sugar on medium speed until a smooth batter is formed (this should take 3-5 minutes). While the machine is running, add the eggs, the vanilla extract, and almond extract (if you're using it), until incorporated into the batter.
3. Combine the flour, salt, and baking powder in a medium bowl. Slowly add the flour mixture to the batter and mix on low speed just until a dough is formed (don't over-beat!). Either by hand (literally) or with a big spoon or spatula, fold the nuts and chips into the dough.
4. Once the dough is all blended, line and/or grease a 9 x 13-inch baking pan with Pam. Spread the batter into the pan with a greased spatula or just use your hands to press the dough in (this is what I did) and place in the preheated oven. Bake for 30-35 minutes, until set and lightly golden (this may even take 40 minutes, so just keep an eye on them!). Allow to cool completely in the pan before cutting. Store in an air-tight container.

Chicken Bacon Mushroom Fajitas


Let me start out by saying I love the hell out of ANYTHING Chicken Bacon and Mushroom it's the best combination ever even better with Cheese yummy! I started out with these two things a Samuel Adams and Fajita seasoning.

I cut up the chicken and covered in it lime juice, lime, garlic, fajita seasoning and a little Canola Oil and I let it sit in the refrigerator over night.

I then added the beer and let it sit while I prepared the other things :)

Bell peppers plus onions sprayed in Canola Oil and seasoned with black pepper and fajita seasoning. I had forgot about the mushrooms at this point haha.

Get your bacon out and ready to go in the oven I'm sure you can guess what I flavored it with :D

Throw Chicken and Lime mixture into the pan for some browning. The only big pan I had at that time clean was a Wok so I used it.

Side items: Tomato, Limes, Lettuce and Jalapenos.

I'm working so hard haha

It's worth it though look at that yummyness!

You can tell I'm tired for sure but I was starving by that point!

Tasty tasty I was very excited to eat I threw a handful of Cheese on top of it right at the end of cooking time.

Just for fun the Honey Nut Cherrio's I ate the other night super late with strawberries and bananas holy mother of pregnancy those were so delicious!

Veggie & Steak Kabobs

Okay okay so I must start out by saying my mom did prepare MOST of this meal. I was kinda her side chef haha. I was going to make it but this pregnancy is kicking my booty!


The steaks were marinated in a 24oz can of Modelo Especiale for quite a while for tender-ness :) I cut up the mushrooms and bell peppers and shoved them on the end of the skewers and sprayed them with pam and everything was COVERED in Montreal Steak Seasoning NomNomNom let me tell you. If you somehow haven't tried it you must!


Got those babies on the grill ready to go.. I was so hungry by this point hah!

Banana Chocolate Chip Muffins



I found a few good recipes with good old google but this one looked the best so I went with it.

I'm looking for healthy muffin recipes to send my boyfriend to work with so he doesn't have to starve in the morning no way can I get up at five to make breakfast everyday plus muffins are delicious even if they are ugly cupcakes hehe.



This is the first time I've used this recipe so I made as few modifications as I could.

Banana Chocolate Chip Muffins

-3 bananas (we had 4 in the freezer so used them all)
I used 5 1/2 bananas I really like banana!
-1 cup chocolate chips
+ 1 cup walnuts
-3/4 cup sugar
I used 1/2 cup white sugar and 1/2 brown sugar
-1 1/2 cup flour
-1 teaspoon each of salt, baking powder, baking soda
-1/3 cup vegetable oil
-1 egg

1. Preheat oven to 375 F.
2. Mash up bananas, and mix them in a bowl with the sugar, oil, and egg.
3. Add the remaining dry ingredients (minus the chips), and mix well.
4. Finally, add the chocolate chip and mix them in, then divide the muffin dough in a 12-hole cupcake tray if you make them bigger, or make 18 with another smaller cupcake tray.
5. Bake for 20 minutes or until golden at the top.

My mom thinks they have to much baking power/ baking soda in them I don't know I thought they were good!

Cowboy Cookies

I'm just your normal everyday baker girl. Yes I'm tatted, Yes I'm gauged and yes I do have chipped nail polish ;)


The end product of delicious chewy bliss.

I knew this post was going to be difficult I just knew it haha. I uploaded all the pictures too small now I have to do it again!

This is what you begin with everything is pictured minus the crisco (I forgot and already had it in the bowl) and the flour which is in a huge container that I also forgot muahaha.


First you mix your Crisco, brown sugar and granulated sugar.

Then you add in the Vanilla

Then your flour mixture comes in.

Then we add all the good stuff :)
Dough is now done.

And rather delicious looking if I say so myself. I love these cookies so much.

All that's left is to chill the dough :)

I don't know about you but I ALWAYS I mean ALWAYS have to stick my cookie dough in the freezer for a few hours or I just can't work with it!

I used this recipe more or less I will note my modifications.

Ingredients

  • 1 cup shortening (recommended: Crisco)
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 cups rolled oats
  • 1/2 cup chopped pecans *I substituted walnuts*
  • 1 (6-ounce) package chocolate chips
  • 1/2 cup shredded coconut *I used no coconut*
  • I added 4 tbls of water

Directions

Preheat oven to 350 degrees F.

In a large bowl, with an electric mixer, cream the shortening, granulated sugar, and brown sugar. Add eggs and the vanilla and beat until well blended. Stir in the flour, baking soda, salt, and baking powder. Add oats, nuts, chocolate chips and coconut, mix until combined. Spoon cookie mixture onto greased foil lined cookie sheet. Bake for 8 to 10 minutes. Transfer the cookies to a wire rack to cool.

There are so many different ways to make this cookie I'm definitely switching it up everytime :)

Chicken Bacon Sandwich

I actually have a cookie post to put up also but I think that one will take longer and I haven't slept so I might just wait a minute haha. I've been such an insomniac lately it's so hard for me to sleep at night. I've been trying to think of things to send with my boyfriend to work who doesn't have a microwave or fridge handy.. I don't want to send him with boring sandwiches and since I was awake anyways I whipped this up for his lunch at 3am.


That's our end product looks delicious and trashy right?

First you gotta start with your bacon who doesn't love bacon? I like to bake my bacon with brown sugar and mesquite seasoning rubbed into it. Makes any bacon tastes DIVINE. I love to take the bacon straight from the pan and put it on the bread let it absorb a little of that delicious bacon grease yummah.


Then I just sauteed some chicken I had leftover from last night with Garlic Power, Onion Flakes, Salt & Pepper and threw it on top of that bacon :)

Add some cheese and tomatoes and more salt and pepper and your almost done.

Throw some lettuce on there you may need to do a lil smashing but it's oh so delicious.
