Banana Chocolate Chip Muffins



I found a few good recipes with good old google but this one looked the best so I went with it.

I'm looking for healthy muffin recipes to send my boyfriend to work with so he doesn't have to starve in the morning no way can I get up at five to make breakfast everyday plus muffins are delicious even if they are ugly cupcakes hehe.



This is the first time I've used this recipe so I made as few modifications as I could.

Banana Chocolate Chip Muffins

-3 bananas (we had 4 in the freezer so used them all)
I used 5 1/2 bananas I really like banana!
-1 cup chocolate chips
+ 1 cup walnuts
-3/4 cup sugar
I used 1/2 cup white sugar and 1/2 brown sugar
-1 1/2 cup flour
-1 teaspoon each of salt, baking powder, baking soda
-1/3 cup vegetable oil
-1 egg

1. Preheat oven to 375 F.
2. Mash up bananas, and mix them in a bowl with the sugar, oil, and egg.
3. Add the remaining dry ingredients (minus the chips), and mix well.
4. Finally, add the chocolate chip and mix them in, then divide the muffin dough in a 12-hole cupcake tray if you make them bigger, or make 18 with another smaller cupcake tray.
5. Bake for 20 minutes or until golden at the top.

My mom thinks they have to much baking power/ baking soda in them I don't know I thought they were good!

Cowboy Cookies

I'm just your normal everyday baker girl. Yes I'm tatted, Yes I'm gauged and yes I do have chipped nail polish ;)


The end product of delicious chewy bliss.

I knew this post was going to be difficult I just knew it haha. I uploaded all the pictures too small now I have to do it again!

This is what you begin with everything is pictured minus the crisco (I forgot and already had it in the bowl) and the flour which is in a huge container that I also forgot muahaha.


First you mix your Crisco, brown sugar and granulated sugar.

Then you add in the Vanilla

Then your flour mixture comes in.

Then we add all the good stuff :)
Dough is now done.

And rather delicious looking if I say so myself. I love these cookies so much.

All that's left is to chill the dough :)

I don't know about you but I ALWAYS I mean ALWAYS have to stick my cookie dough in the freezer for a few hours or I just can't work with it!

I used this recipe more or less I will note my modifications.

Ingredients

  • 1 cup shortening (recommended: Crisco)
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 cups rolled oats
  • 1/2 cup chopped pecans *I substituted walnuts*
  • 1 (6-ounce) package chocolate chips
  • 1/2 cup shredded coconut *I used no coconut*
  • I added 4 tbls of water

Directions

Preheat oven to 350 degrees F.

In a large bowl, with an electric mixer, cream the shortening, granulated sugar, and brown sugar. Add eggs and the vanilla and beat until well blended. Stir in the flour, baking soda, salt, and baking powder. Add oats, nuts, chocolate chips and coconut, mix until combined. Spoon cookie mixture onto greased foil lined cookie sheet. Bake for 8 to 10 minutes. Transfer the cookies to a wire rack to cool.

There are so many different ways to make this cookie I'm definitely switching it up everytime :)

Chicken Bacon Sandwich

I actually have a cookie post to put up also but I think that one will take longer and I haven't slept so I might just wait a minute haha. I've been such an insomniac lately it's so hard for me to sleep at night. I've been trying to think of things to send with my boyfriend to work who doesn't have a microwave or fridge handy.. I don't want to send him with boring sandwiches and since I was awake anyways I whipped this up for his lunch at 3am.


That's our end product looks delicious and trashy right?

First you gotta start with your bacon who doesn't love bacon? I like to bake my bacon with brown sugar and mesquite seasoning rubbed into it. Makes any bacon tastes DIVINE. I love to take the bacon straight from the pan and put it on the bread let it absorb a little of that delicious bacon grease yummah.


Then I just sauteed some chicken I had leftover from last night with Garlic Power, Onion Flakes, Salt & Pepper and threw it on top of that bacon :)

Add some cheese and tomatoes and more salt and pepper and your almost done.

Throw some lettuce on there you may need to do a lil smashing but it's oh so delicious.
